I’m secretly a carnivore…like no joke, I would eat meat every meal, every day if it was good for me to do so.This little known fact, of being a carnivore, means that I am always on the lookout for a yummy way to prepare meat.
Making a delicious beef roast doesn’t have to be a big long drawn out meal prep process, because now that you can make it in your Instant Pot it is cooked in a fraction of the time of doing a roast in a slow cooker or the oven.
First, I’m going to share with you a video of the process of making roast beef in an Instant Pot, then I will share the still images that go with the process found in the recipe card, below.

In a medium sized bowl mix all the dry ingredients.
Dry your roast with clean paper towels and then dredge it in the herb mixture. More than once if you need to.
This is what it looks like when it’s on saute mode and you brown every side of the roast.
Add the broth and pepperoncini’s with juice. Process on meat setting for one hour. Make sure to follow the directions in the recipe card.
Then, after you naturally release the pressure, you can either slice it or chip it to your desired size.

Instant Pot Pressure Cooker Italian Roast Beef
Italian Beef made in an Instant Pot pressure cooker is a delicious way to make roast beef to chip for sandwiches, or serve it with potatoes and gravy.
Ingredients
- 5 lb roast
- 2 Tablespoons olive oil
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon sugar
- 1 teaspoon Italian seasoning
- Pinch celery salt
- Salt and pepper, to taste
- 2 cups beef broth
- 1 cup pepperoncini peppers, with juice
Instructions
- Place the olive oil in your Instant Pot and set to Saute setting.
- Pat the roast dry with paper towel and then season all over with the spices.
Place the roast in the hot oil and sear on all sides, about 2 minutes per side.
Once the roast is fully browned, turn off the Instant Pot. - Remove the meat, add the beef broth and peppers with juice. Place the trivet in the pot, then put the roast on the trivet.
- Secure the lid on the Instant Pot and select Meat/Stew setting for 60 minutes. Allow to process.
- Natural release the pressure.
- Shred the meat with a meat shredder or two forks.
- Serve with your favorite sides, use it for taco's sandwich meat.
MMMMM! Isn’t instant Pot Italian Roast Beef divine?! It’s so juicy and flavorful too and get’s my meatlover’s eye bugging out of my head when I see it done & ready to eat.
