Pepperoni Pasta Bake

If you are new to my recipes, all you need to know is that I try to cook pretty healthy for my family. Cooking healthy is VERY time consuming though, so I simplify it as much as possible…meaning that I dump and mix ingredients together…nothing fancy and kinda lazy, but it works for me! This is one of my husbands favorite casserole’s that I make, I’m guessing that is because it has two types of meat in it…he’s such a meat GUY! Anyway, read on for the recipe, some photo’s, and a printable version as well. 
 
 
Preheat oven to 350°F. In a large mixing bowl add the following:



½-1 lb Low-Fat Sausage, Browned
½ C Grated Parmesan Cheese
2 T Flax Meal
1 Jar Spaghetti Sauce
1 Jar Water (use the spaghetti jar)
1T Italian Seasoning
1 Can Mushrooms, Drained (pieces & stems)
1 tsp Sea Salt
½ Package Turkey Pepperoni (sliced in half)

Stir well, then add:


7 Cups Uncooked Whole Wheat Egg Noodles


Mix Well. Place into a large (4ish Quarts) buttered casserole dish (you will need to stir this later, so use a dish large enough to compensate for that). Cover tightly with foil and bake for 30 minutes. When the 30 minutes is up, remove from oven.  Adjust heat to 400°F.

Uncover and stir the mixture well. Then grate your desired amount of Mozzarella Cheese over the top. Return to the oven, uncovered this time, and bake for an additional ten minutes. 

Remove from oven. Let it cool for ten minutes before serving. Can salt and pepper to taste.  I like to serve this with a side of green beans, a green salad, or asparagus is good too.

 

I browned a whole lb of turkey sausage this time.

These are my favorite noodles to use for this recipe, they come out the perfect texture even though I don’t pre-cook them. If you use another kind you may want to adjust the water amount slightly.
This is what it looks like all mixed together and added to my greased casserole dish.
 
This is how it should look right after it has cooked 30 minutes (covered) and then mixed.
 
Add your desired amount of shredded Mozzarella cheese and return to the oven but remember it’s uncovered this time.
 
The cheese is melted it’s time to get it out, let it rest ten minutes, then dish it out.
